Zucchini Gratin

Ingredients

  • 2 T butter
  • 1 onion, cut in 1/2 and sliced
  • 2 medium zucchini, sliced 1/4-inch thick
  • 2/3 t salt
  • 1/3 t pepper
  • Pinch ground nutmeg
  • 2 t all-purpose flour
  • 1/3 cup hot milk
  • 1/4 cup fresh bread crumbs
  • 1/4 cup grated Gruyere

Directions

  1. Melt butter in a large saute pan and sweat the onions over low heat.
  2. Add zucchini and cook, covered, for 10 mins.
  3. Add salt, pepper, and nutmeg and cook uncovered for 5 mins.
  4. Stir in flour. Add hot milk and cook over low heat for a few minutes, until it makes a sauce.
  5. Pour into 8 by 10 baking dish.
  6. Combine bread crumbs and cheese and sprinkle on top of zucchini.
  7. Dot with 1 T of butter cut into small bits and bake for 20 minutes at 400F, or until bubbly and browned.
