Ingredients
- 2 T butter
- 1 onion, cut in 1/2 and sliced
- 2 medium zucchini, sliced 1/4-inch thick
- 2/3 t salt
- 1/3 t pepper
- Pinch ground nutmeg
- 2 t all-purpose flour
- 1/3 cup hot milk
- 1/4 cup fresh bread crumbs
- 1/4 cup grated Gruyere
Directions
- Melt butter in a large saute pan and sweat the onions over low heat.
- Add zucchini and cook, covered, for 10 mins.
- Add salt, pepper, and nutmeg and cook uncovered for 5 mins.
- Stir in flour. Add hot milk and cook over low heat for a few minutes, until it makes a sauce.
- Pour into 8 by 10 baking dish.
- Combine bread crumbs and cheese and sprinkle on top of zucchini.
- Dot with 1 T of butter cut into small bits and bake for 20 minutes at 400F, or until bubbly and browned.
