Habanero Apricot Chicken

Ingredients

  • 4 small chicken breasts

Cooking sauce:

  • 1/4 c apricot preserves
  • 1/2 T dijon
  • 1 t worcestershire
  • 1 T minced habaneros chilis
  • 1 t apple cider vinegar
  • 1/8 t pepper
  • 1/8 t salt
  • 1 garlic

Thickener

  • 1/2 T cornstarch
  • 1/2 T water

Directions

  1. Put chicken in bottom of slow cooker
  2. Whisk cooking sauce ingredients together and pour over ensuring chicken coated
  3. Cook on low for 5 hours
  4. Remove chicken and shred
  5. Combine corn starch and water and use to thicken sauce in slow cooker
  6. Add chicken and toss to coat
  7. Serve with Habanero Cabbage Slaw

Notes

  • Originally a sandwich but try without putting in a bun
  • 4 servings because 2 would be too small for slow cooker
