Ingredients
- 1 pork tenderloin 1.25 lb
- 1/4 c blackberry preserves
- 1/4 c dry white wine or apple juice
- 1/8 c balsamic
- 1/8 c oil
- 1/8 c dijon mustard
- 3 garlics minced
- 1 t soy sauce
- 1 t shredded orange peel
- 1 t fresh snipped rosemary
Directions
- Marinate in mixture of all other ingredients. 2 to 5 hours in refrigerator.
- Preheat oven to 425F.
- Drain pork and reserve marinade.
- Roast on shallow pan lined with foil for 35 to 45 mins - 155F. Cover with foil and stand 10 mins.
- Boil marinade, simmer 3 to 5 mins uncovered. Serve with pork.
