Blackberry Balsamic Pork Tenderloin

Ingredients

  • 1 pork tenderloin 1.25 lb
  • 1/4 c blackberry preserves
  • 1/4 c dry white wine or apple juice
  • 1/8 c balsamic
  • 1/8 c oil
  • 1/8 c dijon mustard
  • 3 garlics minced
  • 1 t soy sauce
  • 1 t shredded orange peel
  • 1 t fresh snipped rosemary

Directions

  1. Marinate in mixture of all other ingredients. 2 to 5 hours in refrigerator.
  2. Preheat oven to 425F.
  3. Drain pork and reserve marinade.
  4. Roast on shallow pan lined with foil for 35 to 45 mins - 155F. Cover with foil and stand 10 mins.
  5. Boil marinade, simmer 3 to 5 mins uncovered. Serve with pork.
