Ingredients
- 2 chicken breasts
- 1 green pepper
- 2 T oil
- 3 - 4 dried red chillis soaked in water for 10 mins.
- 1 spring onion cut in sections
- 1 T hoisin
- 1 t szechuan paste
- 1 T sherry
- 1/4 cup cashews
- 1 t ginger
- stock or water
- sesame oil
Directions
- Cut chicken and pepper in small cubes
- Heat oil and stir fry chicken until colour changes - remove and keep warm
- Add pepper, chillis, scallion and fry 1 minute. Add chicken, hoisin, szechuan, sherry and ginger. Add water or stock to make sauce. Cook 1 minute. Add cashews and few drops sesame oil.
