Beef Lombardi

Ingredients

  • 1.5 lb mince
  • 1 can chopped tomatoes
  • 1 can diced tomatoes/green chilies
  • 2 t sugar
  • 2 t salt
  • 1/4 t pepper
  • 1/2 can tomato paste
  • 1 T italian seas.
  • 12 oz pasta
  • 1/2 c chopped green onion
  • 1 c sour cream
  • 1/2 c parmesan
  • 1/2 c cheddar
  • 1/2 c mozzarella

Directions

  1. Cook mince in skillet over medium heat 5 to 6 mins. Drain.
  2. Stir in tomatoes, sugar, salt and pepper. Cook 5 mins.
  3. Add tomato paste and italian seas. Simmer 30 mins.
  4. Cook pasta and drain.
  5. Combine pasta, sour cream and onions.
  6. Put pasta in bottom of baking dish, add beef then cheese.
  7. Bake covered with foil at 350F 35 mins. Bake uncovered 5 mins.

Notes

  • 3 meals for 2 people
  • Freeze before bake step
