Chicken with Tomatoes and Wine

Ingredients

  • 2 chicken breast halves
  • 1.5 T butter
  • 1 T oil
  • Salt and pepper
  • 1/2 T rosemary chopped
  • 1 garlic crushed
  • 1 T shallots chopped
  • 3/8 c mushrooms quartered
  • 7 oz plum tomatoes from can
  • 1/4 c chicken broth
  • 3/8 c chardonnay (I used red wine)

Directions

Brown chicken in butter. Season with salt and pepper and rosemary. Keep warm.

Saute garlic and shallots. Add mushrooms and tomatoes and cook 5 mins. Add broth and wine and cook 10 mins.

Add chicken and cook 3 minutes.
