Ingredients
- 2 chicken breast halves
- 1.5 T butter
- 1 T oil
- Salt and pepper
- 1/2 T rosemary chopped
- 1 garlic crushed
- 1 T shallots chopped
- 3/8 c mushrooms quartered
- 7 oz plum tomatoes from can
- 1/4 c chicken broth
- 3/8 c chardonnay (I used red wine)
Directions
Brown chicken in butter. Season with salt and pepper and rosemary. Keep warm.
Saute garlic and shallots. Add mushrooms and tomatoes and cook 5 mins. Add broth and wine and cook 10 mins.
Add chicken and cook 3 minutes.
