Fish for Fish and Chips
Ingredients
- 3/4 lb cod fillets
- 1/4 cup flour
- 1/4 T baking powder
- 1/4 t lemon zest
- pinch cayenne
- 1/2 t salt
- 1/4 t pepper
- 1/4 c water
- 1/2 extra large egg
Directions
- Sprinkle cod with salt and pepper and cut into 1.5 x 3” pieces.
- Combine flour, baking powder, zest, cayenne, salt and pepper. Whisk in water and egg.
- Heat 1/2” oil in frying pan to 360F.
- Dip fillet in batter, drips in bowl then place in oil. Don’t crowd. Cook on each side 2 to 3 minutes and remove to plate with paper towel.
