Fish for Fish and Chips

Ingredients

  • 3/4 lb cod fillets
  • 1/4 cup flour
  • 1/4 T baking powder
  • 1/4 t lemon zest
  • pinch cayenne
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 c water
  • 1/2 extra large egg

Directions

  1. Sprinkle cod with salt and pepper and cut into 1.5 x 3” pieces.
  2. Combine flour, baking powder, zest, cayenne, salt and pepper. Whisk in water and egg.
  3. Heat 1/2” oil in frying pan to 360F.
  4. Dip fillet in batter, drips in bowl then place in oil. Don’t crowd. Cook on each side 2 to 3 minutes and remove to plate with paper towel.
