Red Rice

Ingredients

  • 4 rashers bacon (omit and use oil for vegetarian)
  • 1/2 small onion chopped
  • 1/2 c rice uncooked
  • 1/2 jalapeno chopped
  • 1.25 c stock
  • 2 T tomato paste
  • 1/4 t salt (1/2 t if omit bacon)
  • 1/4 t pepper

Directions

  1. Cook bacon and remove.
  2. Saute onion in bacon fat.
  3. Add rice, jalapeno, tomato, salt and pepper and cook 1 min.
  4. Add stock, cover and simmer 20 mins. or until rice cooked and liquid absorbed.
  5. Crumble bacon and add.
