Ingredients
- 4 rashers bacon (omit and use oil for vegetarian)
- 1/2 small onion chopped
- 1/2 c rice uncooked
- 1/2 jalapeno chopped
- 1.25 c stock
- 2 T tomato paste
- 1/4 t salt (1/2 t if omit bacon)
- 1/4 t pepper
Directions
- Cook bacon and remove.
- Saute onion in bacon fat.
- Add rice, jalapeno, tomato, salt and pepper and cook 1 min.
- Add stock, cover and simmer 20 mins. or until rice cooked and liquid absorbed.
- Crumble bacon and add.
