Ingredients
- 1 English cucumber peeled and diced - reserve 1/4 c
- 1 avocado diced - reserve 1/4 c
- 1/2 t lemon zest
- 1 T lemon juice
- 1/4 c cilantro
- 1 spring onion, white and pale green only, coarsely chopped
- 1 jalapeno chopped
- 1 c nonfat plain yoghurt
- 1 c cold water
- 1 1/2 t salt
- 1/4 t pepper
Directions
- Puree in blender.
- Divide into 4 bowls and add reserved cucumber and avocado.
- Cover with cling film and refrigerate 30 mins.
