Chilled Avocado and Cucumber Soup

Ingredients

  • 1 English cucumber peeled and diced - reserve 1/4 c
  • 1 avocado diced - reserve 1/4 c
  • 1/2 t lemon zest
  • 1 T lemon juice
  • 1/4 c cilantro
  • 1 spring onion, white and pale green only, coarsely chopped
  • 1 jalapeno chopped
  • 1 c nonfat plain yoghurt
  • 1 c cold water
  • 1 1/2 t salt
  • 1/4 t pepper

Directions

  1. Puree in blender.
  2. Divide into 4 bowls and add reserved cucumber and avocado.
  3. Cover with cling film and refrigerate 30 mins.
