Italian Zucchini

Ingredients

  • 1 med onion sliced
  • 1 garlic minced
  • 2 lb zucchini sliced
  • 4 tomatoes chopped
  • 1 green pepper chopped
  • 1/4 c oil
  • grated Parmesan

Directions

  1. Cook onion and garlic in oil until browned.
  2. Add zucchini, tomatoes, pepper and cover, cook for 10 mins.
  3. Sprinkle with parmesan before serving.
