Pork and Peppers

Ingredients

  • 1/2 green pepper sliced
  • 1/2 red pepper sliced
  • Onion chopped
  • Pork chopped in thin strips
  • 7 oz beef broth
  • 1/2 t Thai curry paste
  • flour to thicken

Directions

  1. Cook onions and pepper in oil for 3 to 4 mins. Remove.
  2. Coat pork in oil and saute 3 to 4 mins until browned.
  3. Add peppers to pan and broth and paste. Bring to boil and simmer over reduced heat for 8 to 10 mins.
  4. Thicken with flour as necessary
