Zucchini Risotto

Ingredients

  • 4 med zuccini diced
  • 1 large onion diced
  • 1 t dill
  • 2 T oil
  • 1.25 c cooked rice
  • 1 egg
  • 1/2 c grated cheese
  • salt and pepper

Directions

  1. Saute zucchini in oil with dill and onion until softened.
  2. Add remaining ingredients and bake at 350 F for 45 mins.
