Chicken Chasseur
Ingredients
- 2 chicken breasts
- 2 t flour
- 1 T oil
- 1/4 cup onion chopped
- 1 garlic chopped
- 1/2 t thyme
- 1 t rosemary
- 8 fl oz red wine or stock
- 1/2 cup canned tomatoes
- 1 bayleaf
- 4 oz mushrooms in 1/2 inch pieces
- salt and pepper
Directions
- Season chicken with salt and pepper, dust with flour
- Heat oil
- Brown chicken on all sides and remove
- Add onion and garlic and fry for 5 mins til pale gold
- Stir in herbs, wine and tomatoes
- Bring to simmer then return chicken and add bayleaf
- Put lid on and simmer as gently as possible for 40 minutes
- Add mushrooms, turn chicken over and simmer without lid for 10 mins.
- Remove chicken and keep warm
- Turn heat up and let sauce bubble and reduce for 3 - 4 mins. until thick - serve over chicken
