Dijon Chicken
Ingredients
- 2 boneless and skinless chicken breast halves
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1/4 cup minced onion
- 1 tablespoon thickener
- 1 tablespoon Dijon mustard
Directions
- Brown the chicken breasts in the butter for 2 minutes on each side.
- Mix together the remaining ingredients. Reduce heat to low and pour the mixture over the chicken. Cover and simmer for 20 minutes.
- Serve with the mustard sauce over the chicken. If it does not thicken sufficiently, remove the chicken from the pan and turn the heat up. Stir constantly until thickened.
