Dijon Chicken


  • 2 boneless and skinless chicken breast halves
  • 1 tablespoon butter
  • 1/2 cup chicken broth
  • 1/4 cup minced onion
  • 1 tablespoon thickener
  • 1 tablespoon Dijon mustard


  1. Brown the chicken breasts in the butter for 2 minutes on each side.
  2. Mix together the remaining ingredients. Reduce heat to low and pour the mixture over the chicken. Cover and simmer for 20 minutes.
  3. Serve with the mustard sauce over the chicken. If it does not thicken sufficiently, remove the chicken from the pan and turn the heat up. Stir constantly until thickened.
