Bananas Foster Upside Down Cake

Ingredients

  • 1/2 c chopped pecans
  • 1/2 c butter softened and divided in two
  • 1 cup light brown sugar
  • 2 T rum
  • 2 ripe bananas
  • 3/4 c sugar
  • 2 eggs
  • 3/4 c milk
  • 1/2 c sour cream
  • 1 t vanilla
  • 2 c all purpose baking mix
  • 1/4 t cinnamon

Directions

  1. Preheat oven to 350.
  2. Bake pecans 8 to 10 mins until toasted.
  3. Melt 1/4 c butter in 10" cast iron skillet or 9" round cake tin with 2" sides. Stir in brown sugar and rum.
  4. Cut bananas into 1/4" slices diagonally and put in pan. Sprinkle with pecans.
  5. Beat white sugar and 1/4 c butter, add eggs, then milk and sour cream and vanilla. Beat in baking mix and cinnamon. Pour over skillet mixture. Put on jelly roll pan and bake at 350 for 40 to 45 mins.
  6. Cool 10 mins then invert.
