Baked Pesto Leeks

Ingredients

  • 1 large leek (17.6 - 2.2)
  • 1 tbsp pesto (0.25)
  • 1/4 cup cream cheese (2)
  • 2 oz mozzarella grated (2)

Directions

  1. Clean the leek and cut in 1/2 inch slices. Boil the leek for 5 minutes in salted water. Drain very well.
  2. Put the leek in a gratin dish.
  3. Mix the cream cheese and pesto and spread on top of the leek.
  4. Cover with mozzarella cheese.
  5. Bake at 400F for 20 to 30 mins.
