Pesto
Ingredients
- 2 cups packed fresh basil leaves
- 1/3 cup pine nuts (6.7 - 2.7)
- 1 garlic clove, peeled and pressed (1 - 0.1)
- 1/4 teaspoon salt
- 1/2 cup olive oil
- 1/3 cup parmesan cheese grated (1)
- 1/2 cup water
Directions
- Wash and dry the basil leaves (a salad spinner works well) and put them in a food processor.
- Add the pine nuts, garlic and salt. Chop finely.
- Add the oil while the processor is running.
- Stir in the parmesan cheese and then the water.
- The pesto can be frozen until required. Freezing it in an ice cube tray makes it easy to thaw small amounts as desired.
- Approximately 6g total for about 1.5 cups
