Pesto

Ingredients

  • 2 cups packed fresh basil leaves
  • 1/3 cup pine nuts (6.7 - 2.7)
  • 1 garlic clove, peeled and pressed (1 - 0.1)
  • 1/4 teaspoon salt
  • 1/2 cup olive oil
  • 1/3 cup parmesan cheese grated (1)
  • 1/2 cup water

Directions

  1. Wash and dry the basil leaves (a salad spinner works well) and put them in a food processor.
  2. Add the pine nuts, garlic and salt. Chop finely.
  3. Add the oil while the processor is running.
  4. Stir in the parmesan cheese and then the water.
  5. The pesto can be frozen until required. Freezing it in an ice cube tray makes it easy to thaw small amounts as desired.
  6. Approximately 6g total for about 1.5 cups
