Peppered Bacon-wrapped Pork Tenderloin
Ingredients
- 2 T butter
- 3/8 lb mushrooms sliced
- 1/2 small onion chopped
- 1/8 c pecans chopped and toasted
- 1 tenderloin
- 1/2 t salt
- 1/2 t black pepper
- 4 bacon slices
- 1 t splenda
- 1/2 t black pepper
Directions
- Melt butter over medium high and saute mushrooms and onions until tender. Stir in pecans.
- Trim pork and flatten to 1/4 inch between 2 sheets of plastic wrap. Sprinkle with salt and pepper.
- Spread mushroom mix evenly over and roll up starting with the long end. Wrap bacon around. You can hold in place with wooden skewers but I did not need to.
- Place on lightly greased rack in roasting pan and rub with splenda and pepper.
- Bake at 450 for 15 mins then 400 for 15 mins. or until meat thermometer = 160°F
