Peppered Bacon-wrapped Pork Tenderloin

Ingredients

  • 2 T butter
  • 3/8 lb mushrooms sliced
  • 1/2 small onion chopped
  • 1/8 c pecans chopped and toasted
  • 1 tenderloin
  • 1/2 t salt
  • 1/2 t black pepper
  • 4 bacon slices
  • 1 t splenda
  • 1/2 t black pepper

Directions

  1. Melt butter over medium high and saute mushrooms and onions until tender. Stir in pecans.
  2. Trim pork and flatten to 1/4 inch between 2 sheets of plastic wrap. Sprinkle with salt and pepper.
  3. Spread mushroom mix evenly over and roll up starting with the long end. Wrap bacon around. You can hold in place with wooden skewers but I did not need to.
  4. Place on lightly greased rack in roasting pan and rub with splenda and pepper.
  5. Bake at 450 for 15 mins then 400 for 15 mins. or until meat thermometer = 160°F
