Chipotle Chicken and Rice

Ingredients

  • 1 T oil
  • Chicken breast (recipe had thighs) for 2
  • 1/2 t salt x 2
  • Pinch pepper
  • 1/2 medium onion thinly sliced
  • 1.5 garlics
  • 1/4 t cumin
  • 1 T chipotle chile con adobo
  • 1 large tomato diced = 1/2 can tomatoes
  • 1/2 cup long grain rice

Directions

Heat oil and season chicken with salt and pepper. Brown chicken on both sides for 6 minutes total. Remove.

On medium heat saute onion 5 minutes until soft. Add garlic, cumin and chile. Add tomatoes and 1/2 t salt and cook 3 minutes. Add 1 cup water and chicken. Cover and simmer 25 minutes.

Remove chicken, add rice and submerge it. Add chicken back, cover and cook until rice done and liquid absorbed, 25 to 30 minutes.
