Creamy Tomato Stuffed Chicken

Ingredients

  • 2 chicken breast
  • 1/4 t salt
  • 1/4 t pepper
  • 2 oz cream cheese
  • 1 garlic clove
  • 1/8 cup sun dried tomatoes chopped
  • 1/4 cup basil fresh
  • 1/8 cup parmesan
  • 3 tomatoes chopped
  • 1 t oil
  • 1 t red wine vinegar

Directions

  1. Flatten chicken to 1/4 inch
  2. Sprinkle with 1/8 t salt and 1/8 t pepper
  3. Stir together cream cheese and sun dried tomatoes. Spread over chicken and roll up securing with wooden pick.
  4. Sprinkle 1/8 cup of basil and parmesan over chicken. Put in baking dish oiled.
  5. Bake at 350 for 30 to 45 minutes - remove and let stand 10 mins.
  6. Stir together tomatoes, oil, 1/8 t salt and pepper, 1 garlic clove and 1/8 cup basil.
  7. Cut chicken into slices and serve with tomatoes over
