Creamy Tomato Stuffed Chicken
Ingredients
- 2 chicken breast
- 1/4 t salt
- 1/4 t pepper
- 2 oz cream cheese
- 1 garlic clove
- 1/8 cup sun dried tomatoes chopped
- 1/4 cup basil fresh
- 1/8 cup parmesan
- 3 tomatoes chopped
- 1 t oil
- 1 t red wine vinegar
Directions
- Flatten chicken to 1/4 inch
- Sprinkle with 1/8 t salt and 1/8 t pepper
- Stir together cream cheese and sun dried tomatoes. Spread over chicken and roll up securing with wooden pick.
- Sprinkle 1/8 cup of basil and parmesan over chicken. Put in baking dish oiled.
- Bake at 350 for 30 to 45 minutes - remove and let stand 10 mins.
- Stir together tomatoes, oil, 1/8 t salt and pepper, 1 garlic clove and 1/8 cup basil.
- Cut chicken into slices and serve with tomatoes over
