Giggle Cake


  • 12oz/2 cups mixed dried fruit
  • 4oz butter or margarine
  • 6oz/1 cup soft brown sugar
  • 8oz/2 cups self raising flour
  • Pinch of salt
  • 2 eggs beaten
  • 7.5oz can chopped pineapple
  • 4oz glace cherries – halved


Cover mixed fruit in large bowl with boiling water. Soak 10 to 15 mins and drain well.
Melt butter and sugar in a large pan.
Add mixed fruit and cook over low for 4 to 5 mins stirring frequently.
Transfer to mixing bowl and cool.
Sift flour and salt into dried fruit and stir well.
Add eggs and mix thoroughly.
Add pineapple and cherries and stir to combine.
Transfer to greased, kine 2lb loaf tin and level surface.
Bake at 350 for 1 hour.
If skewer comes out clean, it is done.
