Crustless Quiche with Bacon


  • 2 eggs
  • 1/4 cup heavy cream & 1/8 c water or 3 fl oz half-and-half
  • pinch of salt
  • pinch of black pepper
  • 1.5 oz shredded cheese (Cheddar, Jack etc.)
  • 3 rashers crumbled cooked bacon


  1. Combine eggs, cream and water. Stir in remaining ingredients.
  2. Pour onto a greased 8" (or smaller) pie plate.
  3. Bake for 45 minutes at 325F or until a knife inserted in the center comes out clean. Allow to stand for 10 minutes before serving or chill and eat cold.


Can use 1/4 c vegetables instead of bacon
