Stuffed Cherry Tomatoes

Ingredients

  • Cherry Tomatoes
  • Pesto
  • Crumbled goat cheese - same volume as pesto

Directions

  1. Slice the tops off the tomatoes, cut a thin slice from the bottom so it stands up. Scoop out pulp and turn upside down on paper towel to drain.
  2. Mix pesto and goat cheese.
  3. Use a plastic bag to make a piping bag and squeeze pesto into tomatoes.
