Orzo and Herb Pilaf

Ingredients

  • 3/4 T butter
  • 1/4 c chopped onion
  • 3/8 c uncooked orzo
  • 3/4 c chicken stock
  • 1/8 t salt
  • 1/8 t freshly pepper
  • 1/2 c halved cherry tomatoes
  • 1 1/2 T chopped parsley
  • 1/2 T chopped dill

Directions

  1. Melt butter and saute onion 3 minutes.
  2. Add orzo and cook 2 minutes stirring frequently.
  3. Stir in salt, pepper and stock and boil.
  4. Cover and simmer 10 to 12 minutes until liquid absorbed.
  5. Let stand 5 minutes, fluff and add tomatoes, parsley and dill.
