Bacon Potato Frittata

Ingredients

  • 2 slices bacon in 1/2" pieces
  • 1 small sweet potato - 6 oz in 1/4" slices
  • 3 eggs lightly beaten
  • 1/8 c milk
  • 1/4 t pepper
  • 1/8 t salt
  • 1/4 c parmesan
  • 1/8 c spring onions thinly sliced

Directions

  1. Cook bacon in skillet until crisp. Remove and keep only 1 T fat.
  2. Cook potato slices covered for 12 to 15 mins, turning occasionally.
  3. Beat eggs, milk, pepper and salt. Stir in cheese and onions.
  4. Spread potatoes in a layer in skillet, sprinkle with bacon, pour in eggs. Cover and cook 10 mins on medium low until top of eggs are just set.
  5. Loosen and invert onto plate.
