Tortilla Soup

Ingredients

  • 1 T veg oil
  • 1 large onion finely diced
  • 4 garlics crushed
  • 2 jalapeno diced
  • 28 oz can diced tomatoes
  • 2 t oregano
  • 2 t cumin
  • salt and pepper
  • 8 cups beef broth
  • 1/2 bag tortilla chips broken
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 zucchinin diced and sauteed

To garnish use lime in wedges, avocado diced, 8 oz shredded cheese (or diced), chips, sour cream.

Directions

  1. Heat oil in large pan and saute onion 5 mins, then garlic and chiles.
  2. Add tomatoes and spices, salt and pepper.
  3. Add broth, bring to boil and simmer 25 mins over reduced heat.
  4. Add chips and simmer until dissolved, add beans, corn and zucchini.
  5. Serve hot with add ons.
