Ingredients
- 1 T veg oil
- 1 large onion finely diced
- 4 garlics crushed
- 2 jalapeno diced
- 28 oz can diced tomatoes
- 2 t oregano
- 2 t cumin
- salt and pepper
- 8 cups beef broth
- 1/2 bag tortilla chips broken
- 1 can black beans drained and rinsed
- 1 can corn drained
- 1 zucchinin diced and sauteed
To garnish use lime in wedges, avocado diced, 8 oz shredded cheese (or diced), chips, sour cream.
Directions
- Heat oil in large pan and saute onion 5 mins, then garlic and chiles.
- Add tomatoes and spices, salt and pepper.
- Add broth, bring to boil and simmer 25 mins over reduced heat.
- Add chips and simmer until dissolved, add beans, corn and zucchini.
- Serve hot with add ons.
