Pork Tenderloin with Rosemary Pesto

Ingredients

  • 1/8 cup walnuts
  • 1 sprig rosemary
  • 1 t mustard powder
  • 1 garlic
  • 2 T oil
  • 1 tenderloin
  • pinch salt and pepper

Directions

  1. Process walnuts, rosemary, mustard powder and garlic in food processor then add 1 T oil.
  2. Cut tenderloin in half lengthwise and hammer flat.
  3. Spread pesto on tenderloin and fold other half over. Sprinkle with salt and pepper.
  4. Bake 1 hour at 350.
