Split Pea Soup

Ingredients

  • 1 c chopped onion
  • 2 garlic, minced
  • 1/8 c olive oil
  • 1/2 t oregano
  • 1 1/2 t salt
  • 1 t pepper
  • 2 c medium-diced carrots (3 to 4 carrots)
  • 1 c medium-diced red potatoes (3 small)
  • 1 lb dried split green peas
  • 8 c chicken stock or water

Directions

  1. Saute onions and garlic with olive oil, oregano, salt and pepper until translucent, 10 to 15 mins.
  2. Add carrots, potatoes, 1/2 pound of split peas, and chicken stock.
  3. Bring to a boil, then simmer uncovered for 40 mins.
  4. Skim off foam while cooking.
  5. Add remaining split peas and continue to simmer for another 40 mins, or until all the peas are soft.
  6. Stir frequently to keep the solids from burning on the bottom.
