Cheesy Potato Casserole

Ingredients

  • 2 potatoes peeled, cubed and cooked - not falling apart
  • 1/4 t salt
  • 1/2 T butter
  • 2 servings cooked mince
  • 1 spring onion chopped
  • 2 T butter
  • 2 T flour
  • 3/4 c milk
  • 1/4 c gruyere grated/diced
  • 1/4 c cheddar
  • pinch crushed red pepper

Directions

  1. Oven 350 F
  2. Grease casserole dish with butter and add potatoes and mince
  3. Saute onion and peppers then add to casserole and combine
  4. Make sauce with gruyere cheese and pour into casserole
  5. Top with cheddar and bake 30 to 35 mins
