Liberian Cake
Ingredients
- 5 T butter, room temperature
- 1/2 c granulated sugar
- 2 eggs room temperature
- 3/4 c + 1 T flour
- 3/8 t baking soda
- 1/4 t cinnamon
- 1/4 t allspice
- 1/8 t mace
- pinch cloves
- 1/4 t baking powder
- 3.37 fl oz golden syrup
- 2.54 fl oz milk
- 2 T lemon zest
- 3 T raisins chopped
- 2 T coconut
Directions
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time and beat into the butter mixture.
- Sift all the dry ingredients together, mix in the grated lemon zest and fold into the egg mixture, adding alternately with the syrup and milk.
- Stir until the mixture is smooth then fold-in the frut and coconut.
- Pour in 8.5 to 9" springform cake tin.
- Bake in an oven pre-heated to 350 F about 35 - 40 mins. until completely set.
