Liberian Cake

Ingredients

  • 5 T butter, room temperature
  • 1/2 c granulated sugar
  • 2 eggs room temperature
  • 3/4 c + 1 T flour
  • 3/8 t baking soda
  • 1/4 t cinnamon
  • 1/4 t allspice
  • 1/8 t mace
  • pinch cloves
  • 1/4 t baking powder
  • 3.37 fl oz golden syrup
  • 2.54 fl oz milk
  • 2 T lemon zest
  • 3 T raisins chopped
  • 2 T coconut

Directions

  1. Cream together the butter and sugar until light and fluffy. 
  2. Add the eggs one at a time and beat into the butter mixture. 
  3. Sift all the dry ingredients together, mix in the grated lemon zest and fold into the egg mixture, adding alternately with the syrup and milk. 
  4. Stir until the mixture is smooth then fold-in the frut and coconut. 
  5. Pour in 8.5 to 9" springform cake tin. 
  6. Bake in an oven pre-heated to 350 F about 35 - 40 mins. until completely set.
