Ingredients
- 9 oz zucchini
- 3/8 small onion diced
- 3/8 t thyme
- 3 eggs
- 1.5 T milk
- 1/4 c grated cheese
- 6 oz tomatoes sliced
Directions
- Saute zucchini and onion with thyme in covered pan until soft but not brown. Remove cover and cook off liquid.
- Beat eggs, cheese, milk and salt and pepper and add to pan getting under zucchini. Cook until bottom set but top slightly uncooked.
- Add tomatoes on top in circles and bake in 400 F oven until firm.
