Zucchini Frittata

Ingredients

  • 9 oz zucchini
  • 3/8 small onion diced
  • 3/8 t thyme
  • 3 eggs
  • 1.5 T milk
  • 1/4 c grated cheese
  • 6 oz tomatoes sliced

Directions

  1. Saute zucchini and onion with thyme in covered pan until soft but not brown. Remove cover and cook off liquid.
  2. Beat eggs, cheese, milk and salt and pepper and add to pan getting under zucchini. Cook until bottom set but top slightly uncooked.
  3. Add tomatoes on top in circles and bake in 400 F oven until firm.
