Horseradish Pork

Ingredients

  • 1 T oil
  • 2 pork medallions try with pork loin
  • 1/2 t salt
  • 1/4 t pepper
  • 3/8 c chicken broth
  • 1/2 T horseradish
  • 1/2 T dijon
  • 1/8 t red pepper
  • 1/2 T chives chopped
  • 1/2 T butter
  • 1 T half and half

Directions

Preheat saute pan 2 to 3 minutes. Season pork with salt and pepper and saute 3 to 4 minutes per side. Remove.

Boil broth in pan. Whisk in horseradish, mustard and red pepper. Cook 3 to 4 minutes until slightly reduced. Remove pan from heat, whisk in butter, half and half and chives. Return pork to pan and cook 2 minutes on low.
