Spanish Pork

Ingredients

  • 2 lb pork in bite size cubes
  • 2 T oil
  • 2 t flour
  • 2 onions sliced
  • 2 garlics minced
  • 1 t basil
  • 1 can tomatoes
  • 6 fl oz red wine
  • 1 green pepper
  • salt and pepper
  • 2 oz spanish stuffed olives sliced

Directions

  1. Heat oil in casserole then add pork and brown on all sides. 
  2. Remove to a plate and add onions and brown. 
  3. Return meat to pan and add flour.
  4. Stir well and add tomatoes, wine, garlic, basil and salt and pepper. Bring slowly to simmering then cover and move to oven.
  5. Cook for 1.5 hours at 275F.
  6. Add olives and pepper and cook for 30 mins more.

  • Serves 6 so 2 freezer meals
