Spanish Pork
Ingredients
- 2 lb pork in bite size cubes
- 2 T oil
- 2 t flour
- 2 onions sliced
- 2 garlics minced
- 1 t basil
- 1 can tomatoes
- 6 fl oz red wine
- 1 green pepper
- salt and pepper
- 2 oz spanish stuffed olives sliced
Directions
- Heat oil in casserole then add pork and brown on all sides.
- Remove to a plate and add onions and brown.
- Return meat to pan and add flour.
- Stir well and add tomatoes, wine, garlic, basil and salt and pepper. Bring slowly to simmering then cover and move to oven.
- Cook for 1.5 hours at 275F.
- Add olives and pepper and cook for 30 mins more.
