Ingredients
- 1 T oil
- 1/4 t turmeric
- 1/2 c red pepper chopped
- 1/2 cup frozen peas
- 1/2 T garlic
- 2 servings cooked rice
- 1.5 T stock
- 3/8 t salt
- 1/4 t pepper
- 6 oz shrimp
- 1 T lemon juice
Directions
- Heat oil in large skillet over medium high. Add turmeric cook 1 min. Add veg and garlic and cook 2 mins.
- Stir in rice and cook 3 mins without stirring. Reduce to medium.
- Add stock, salt and pepper and cook 7 mins.
- Arrange shrimp on top, cover and cook until shrimp hot. Drizzle lemon juice over and serve.
