Shrimp Paella

Ingredients

  • 1 T oil
  • 1/4 t turmeric
  • 1/2 c red pepper chopped
  • 1/2 cup frozen peas
  • 1/2 T garlic
  • 2 servings cooked rice
  • 1.5 T stock
  • 3/8 t salt
  • 1/4 t pepper
  • 6 oz shrimp
  • 1 T lemon juice

Directions

  1. Heat oil in large skillet over medium high. Add turmeric cook 1 min. Add veg and garlic and cook 2 mins.
  2. Stir in rice and cook 3 mins without stirring. Reduce to medium.
  3. Add stock, salt and pepper and cook 7 mins.
  4. Arrange shrimp on top, cover and cook until shrimp hot. Drizzle lemon juice over and serve.
