Cheddar and Potato Soup

Ingredients

  • 1/4 c butter
  • 1/4 c flour
  • 3 c milk - rather thick and milky - try using milk and stock or water
  • 2 large potatoes baked peeled and cubed
  • 2 spring onions thinly sliced - I used 1/2 regular onion - it was fine
  • 6 strips bacon cooked and crumbled
  • 1 c shredded cheddar
  • 1/2 c sour cream - try not adding - did not seem necessary
  • 3/8 t salt
  • 1/4 t pepper

Directions

  1. Melt butter in large pan, stir in flour and add milk. Cook until thickened - 15 mins.
  2. Add potatoes and onions, simmer gently for 10 mins.
  3. Add remaining ingredients, stir until cheese melted.
  4. Serve hot.
