Ingredients
- 1/4 c butter
- 1/4 c flour
- 3 c milk - rather thick and milky - try using milk and stock or water
- 2 large potatoes baked peeled and cubed
- 2 spring onions thinly sliced - I used 1/2 regular onion - it was fine
- 6 strips bacon cooked and crumbled
- 1 c shredded cheddar
- 1/2 c sour cream - try not adding - did not seem necessary
- 3/8 t salt
- 1/4 t pepper
Directions
- Melt butter in large pan, stir in flour and add milk. Cook until thickened - 15 mins.
- Add potatoes and onions, simmer gently for 10 mins.
- Add remaining ingredients, stir until cheese melted.
- Serve hot.
