Cheese Sauce

Ingredients

  • 20 fl oz milk or half milk and half single cream
  • 1 oz flour - about 2 T
  • 1 t mustard powder
  • 1.5 oz butter
  • 2 oz cheddar cheese - grated
  • 1/2 t lemon juice
  • pinch cayenne
  • salt and pepper

Directions

  1. Put milk, flour, mustard and butter in a pan and bring to a boil whisking constantly.
  2. Once thickened and smooth, add cheese and cook on lower heat for 5 mins.
  3. Add lemon, cayenne and salt and pepper, mix and serve.
NOTE: Make a double quantity and there will be sufficient for 7 (6oz) pots for cauliflower - each pot will do about 1/2 a good size cauliflower.
